Abstract

The following paper aims to reflect on the convergence of the concepts of “knowledge” and “taste” in the field of gastronomy, from the anthropological (based on cultural analysis) and philosophical (based on epistemological analysis) perspectives. This purpose is based on the postulate of the validity of gastronomy as a cultural element, fact and phenomenon; as well as a product of symbolic and functional values, which contributes to the development and well-being of human groups.
